Korean KupKakes

These are for my Korean friend who has a ton of national pride. These were chocolate cupcakes out of a box, with strawberry filling. The filling is just strawberries, sugar, and water, boiled till it reaches a jelly-like consistency. I made holes in the cupcakes using a bottle cap, filled them up with the jelly, and then topped with store-bought icing.

Persistence of Memory

This is a double chocolate cake with cream cheese and blueberry filling. And as usual, it is eggless and the base is a boxed cake mix.

Ingredients:
1 box of Duncan Hines Devil Food cake mix
1 tub of whipped cream cheese
1 small basket of blueberries
1 large handful of chocolate chips
chocolate frosting
cream cheese frosting
sugar
milk
cooking spray
flour

Directions: Separate out the cake mix into two halves. Bake two separate layers from each half of the box mix. For each, mix 7/8 cup of milk with half a box of cake mix and half of the chocolate chips. Oil your cake pan, and sift flour over the oiled surface. You do not want the thin layers of cake to break when you are removing them from the cake pan/stacking them. Bake each layer at 350 degrees F for 20-25mins. The cream cheese filling is 8oz of cream cheese mixed with 3-5 tablespoons of sugar to taste. To make the blueberry filling wash the blue berries and cook them at medium heat over the stove with a few tablespoons of water. Mash the berries as they cook. Add 2-3 tablespoons of sugar to taste. Cook until the berries have reached a jam-like consistency. When the layers and jam have cooled, you are read to stack. Spread a layer of cream cheese over the bottom cake layer. Then spread a layer of the blueberry jam. Finally carefully stack on the top layer, and frost. Here, I was inspired by Dali.

Princess Cake

This is one of my favorite chocolate cake recipes. Its very rich and moist.

Ingredients:
1 box of devil's food chocolate cake mix
4 eggs
1/2 cup of veg oil
5ounce pack of chocolate instant pudding powder
1 cup sour cream
1/3 cup milk
2/3 bag of chocolate chips
1/2 cup of warm water
cream cheese frosting
food coloring

Mix up all the ingredients (except the frosting/food coloring). To make the princess's skirt we used a bundt cake and two cup cakes. Bake bundt for 50-55 mins. Bake cupcakes for 20-25 mins at 350degrees.

To decorate. Flip the bundt cake out of its pan. Slide a barbie doll up through the bottom of the cake. (Note, the Barbie will have to be in a sitting position to fit in the cake.) Fill in the rest of the hole using the cupcakes. (You may have to break up the cupcakes.) Frost to look like a skirt.

Holiday Cupcakes

Sorry I didn't have a chance to post this over the holidays, but here is a quick and fun holiday treat.

Peppermint Cupcakes (makes 9):
1/2 box of devil's food cake mix
3/4 cup of milk
chocolate frosting
chocolate chips (1 handful)
6-9 candy canes (to taste)

Grind up the candy canes. Pass the powder through a large - sieve. The small powder will go into the cake mix, and the larger pieces will serve as the cupcake topper. Mix the cake mix, fine peppermint powder, chocolate chips, and milk, and pour into cupcake papers. Bake for 25-29mins. Let cool. Frost. Cover with the larger candy cane pieces.

Walnut Cupcakes (makes 9):
1/2 box of devil's food cake mix
3/4 cup of milk
cream cheese frosting
chocolate chips (1 handful)
walnuts (1 handful)

Chop up the walnuts into very small pieces. Mix the cake mix, walnuts, chocolate chips, and milk, and pour into cupcake papers. Bake for 25-29mins. Let cool. Frost. Decorate with piping frosting.

Climbing Cake

This one was for a rock climbing enthusiast. The base is a carrot cake with cream cheese frosting. We also baked a chocolate cake, which was cut to the shape of a rock and placed on top of the carrot cake.

Moose Cake!

No fancy recipes here. Just a quick cake I made for an Alsakan friend that I thought I'd share. This is just a yellow box cake with chocolate frosting. The piping is cream cheese frosting done by cutting a small hole in a ziplock bag. The inspiration was Bullwinkle!

Chocolate Cupcakes with Fresh Strawberry Filling

When I bake, there are three requirements...it has to be eggless, quick, and delicious. Here is one of my favorite combinations that I have used in both cake and cupcake form.

The cake is easy...I use Duncan Hines devil's food chocolate cake mix. Instead of egg, oil, and water, I add milk (to replace the quantity of water on the box). The cake rises very well even without the egg. You can make a sheet cake or cupcakes.

Filling: Fresh strawberries and sugar at a ratio of two-three table spoons of sugar per small basket of strawberries depending on sweetness of berries. Chop the strawberries up into very small pieces, and heat berries and sugar on the stove top at a high setting. Let the mixture boil, and the moisture evaporate, and stir often. Eventually, the mixture will start to resemble a jelly. You want to wait until this stage, as too much moisture in the filling with make your cake soggy.

For a cake, spread the filling between layers. If you will be storing the cake before consuming, a thin layer of frosting between each layer of cake and the filling will help keep the moisture in the filling out of the cake.

For cupcakes, use a deep bottle cap (one from a screwtop bottle of wine works well) to drill/scoop out a hole in each cupcake. Fill this hole with the filling, and then frost.

Frosting: I have used both cream cheese and chocolate frosting with this combo, and both taste great!

Poker Face

Another simple out-of-the-box sheet cake from me. I think the theme of the party this cake is going to is obvious. I was trying to recreate her classic look when she tied her hair into a bow.
This was a chocolate cake with cream cheese frosting. I flipped the cake out of the silicon cake pan for a flat surface to work with. I first frosted the cake with the frosting, and then used a butter knife to cut out the shape. If you cut first and frost second, chocolate crumbs from your cake will mix with the frosting giving you a kind of 'oreo' look, which I didn't want for Miss Gaga's face. The colors were made by adding food coloring. I added the texture of hair using a fork. For the sunglasses and lips, I put the frosting into Ziplock bags, cut a tiny hole in the corner of the bags, and piped on the details. The end result: Ga-ga-ohh-la-la!

Christmas Eve Dinner

My mother demanded suggested I host Christmas Eve and invite the family over for dinner. Being super-ambitious, I decided to plan three courses, consisting of six different items. This, just a little, resulted in my flipping out the entire week preceding Christmas Eve, amplified by a massive bug turning up at work that kept me in the office past the grocery store's closing time.

Appetizer
I decided to start the meal with a festive seafood trio - pan seared scallop with roasted green bell pepper sauce, crab rangoon with red sweet and sour sauce, and salmon vol-au-vent with white sauce. I managed to make them all at the same time without destroying any! It did take quite a bit of juggling with the stove top though - luckily we have five burners!

Recipes:
Pan Seared Scallops with Roasted Red Pepper Sauce - I substituted green bell pepper instead and it worked out fine.

Crab Rangoon: Preheat oven to 375F. Mix one 8oz package softened cream cheese with two 6oz cans of drained crab meat, salt and pepper to taste. Put a very small dollop (about 1tsp) on a wonton wrapper. Wet the wrapper around the crab with water and seal - try to squeeze out as much air as possible. Brush with egg wash (optional). Bake at 375F for 15min. For the sweet and sour sauce, saute 1/2 cup of ketchup in 1 Tbsp vegetable oil with sugar to taste (start with 1/4 cup and add until you like the taste).

Salmon Vol-au-vent: Prepare puff pastry vol-au-vent shells according to instructions on package. Salt 3/4lb salmon (cut into small cubes) and let sit for 15min. Melt 2 Tbsp butter over medium heat. Sift in 2 Tbsp flour a little at a time and mix thoroughly. Stir in 1/2 cup milk and (optional) a dash of thyme. Add the salmon and let cook (about 5min). Salt and pepper to taste, then spoon into pastry shells.

Entree
Half my family really like their meat, and the other half really like their seafood, so I decided to be super ambitious and make two main courses. I eventually settled on levying my roommate's stuffed grape leaves recipe for one main dish and making a shrimp fettuccine for the other main dish. Everyone was too busy serving and eating that I forgot to take a decent picture. :( Oh well, just believe me that it looked and tasted pretty good. :) I used whole-grain fettuccine and brown rice for the grape leaves, so it was relatively healthy, too!

Recipe:
Creamy Shrimp and Broccoli Fettuccine - I substituted half-and-half and ended up with a very liquidy sauce. :/ I also added a lot more broccoli because I realized I didn't actually have a vegetable dish. I did add a spinach salad at some point though.

Dessert
For dessert, I thought and I thought and I decided one dessert I really like but haven't yet made was tiramisu. It took me awhile to figure out how to best plate it, but I eventually got it. (I made three friends come over to help eat the trials as I attempted to make it look pretty.)

Recipe:
Simple Tiramisu - I halved the recipe since I wasn't making a whole cake. For the martini glass presentation: cut each ladyfinger in half before soaking in coffee. Put one piece on the bottom of the glass, drizzle some cream over it to cover, sift some cocoa powder on, and repeat twice for a three-layer dessert. It looked excellent - the only complaint I received was that the portion was too small. :D

I remade the tiramisu for my parents' new year's party - and this time I made the entire thing from scratch. A drier, even less sweet cake was requested, so I modified the recipe a bit.

1. For the ladyfingers, I made a sheet cake from a generic ladyfinger recipe: Grease and flour a baking sheet and preheat the oven to 350F. Beat 6 egg whites until foamy. Add 1/4 tsp cream of tartar and beat until stiff peaks form. Slowly beat in 6 tbsp sugar. In a separate bowl, beat 6 egg yolks, 3 tbsp sugar, and 1/2 tsp vanilla extract for 5-6 min, until it's a thick, pale yellow batter. Sift 1 cup flour over egg yolk batter. Fold the egg whites into the yolk and flour. Mix only until incorporated - do NOT overmix. Spread the mixture on the baking sheet and bake for 20-22 min, until the cake is firm and slightly brown.

2. Mix 2 tbsp brandy with about 3/4 cup strong coffee and chill.

3. Beat 1 cup heavy cream until stiff peaks form. Mix 1 lb mascarpone cheese with 1/3 cup sugar, fold into cream.

4. Put one piece of cake in the serving dish. Pour the coffee/brandy over it, until just wet (about 6 tbsp in the dish I used). Cover with 1/2 the cream mixture. Sift unsweetened cocoa powder over it until just covered. Repeat for a second layer.

All-in-all, I like to think this dinner was a success. I even made up menus and everything for each place setting! Mom said she was impressed, and that's all that mattered to me. :)

Crepe Cake

I forget how I got the idea of making a crepe cake into my head, but once I did, it wouldn't leave until I found the perfect recipe and made it. And my perfect excuse? Why my coworkers' holiday potluck, of course.

I pretty much followed the recipe to the T. Except I reduced the amount of sugar in the batter to 6Tbsp. And I'll let you in on a little secret - I was incapable of making perfectly round crepes until the very last one, which I used as the top "layer." Instead, I made approximately half-circled crepes, then when layering them, rotated each layer by 1/3 of the circle. This made the cake kind of poof up in the middle, but I propped the edges up with a little extra cream filling, smoothed out the cream filling as thinly as possible in the middle, and all was well. I think I ended up making the cake too big in diameter though, so it looked flatter than I would have liked. Oh well. It tasted good; I'm considering making another one for Thanksgiving dessert this year.

Also, one last tip. For a realllllllly cold night like the ones we've been having? Standing over the stove making crepes warms you up very nicely, and you get to munch on crepe scraps from the "mishaps" you're bound to have along the way. ^_^

Fondant Experiments!

I've made many cakes in the past, but I've never decorated with fondant. Here are pictures of my first couple escapades into that land of smoooooth sugar.
